Roasted Spaghetti Squash~

This was my first time eating & cooking Spaghetti Squash. I have heard & seen so many great recipes of this wonderful Vegetable! If you have never had it, you must try it. It is pretty simple to cook & many different ways of eating it.


Some use it in place of pasta & pour sauce over it or just add butter (Vegan) Sea salt, pepper & Extra Virgin Olive oil. This is how I cooked it. You will need a sharp knife, it was almost like carving a pumpkin. Split it in half, then scoop the pulp & seeds out (there is not too much of it). Preheat your oven to 375 degrees. I lined a cookie sheet with aluminum, then rubbed EVOO all in the inside of the squash & a bit on the aluminum. Then sprinkled Sea salt & pepper (cracked). Cooked for about 45-55 minutes. Let it cool for about 10 minutes, then with a fork, lightly just shred along the inside & it just falls right off. It had almost a consistency of hash browns. I then sprinkle some red chili flakes on it.


Let me tell you, it was so yummy, I just wish I had not waited so long to try this! I hope you try this, you will not be disappointed! I hope you enjoy it!

Teriyaki Veggie Stirfry~


Need a quick meal?
This is such an easy & quick meal. And so so good! One of my families favorites! What I like about this, is most of the items are usually staple items. Veggies! The portions really depend on what you like.
Ingredient's, what you will need:

Yakisoba Noodles
Brown Rice
Broccoli
Carrots
Cauliflower
Edamame
Green Onions
Red onions
Teriyaki Sauce
You can add any veggies and even tofu.

Chop all veggies in the size you like, and cook for about 10 minutes until lightly brown. (I do not use any oil, I add about a tablespoon of water). Then add about a 1/4 cup of  your choice of Teriyaki sauce, cook on low for about 2 minutes. I then add the noodles & precooked rice. This should take about 10 minutes to cook. I add the Edamame last, for some crunch. If you like it spicy, add some crushed red peppers, or Srirachi sauce. It is that simple.

Leap Day 2012~

It’s Leap Day and a cause for celebration!  After all, this day only comes once every four years.
In case you were wondering what Leap Day was all about, here is a bit of information. Basically, it takes Earth 365 days AND 6 hours to revolve around the sun. So in four years, we have 24 hours and add the extra day on our calendar to make up for it.
Got it?Good! Now what are you going to do with the extra day?
I am going to try & catch up downloading pictures & hopefully put some great homemade Vegan recipes up!

When and how it all began..

Hi! Welcome to my Blog "Vegan Bella Vida" which translate's to "Beautiful Vegan Life".
I became a vegetarian around the age of 15, and that was not by choice. I had spent the night at my girlfirends house, and her older brothers rented the documentary "Faces of Death". I had no idea that this would change my life forever. This movie is now Banned. The movie was about all real videos of cruel farm animal slaughter, It took a few months after watching this horrific film for me to stop eating meat. To be Continued...
